It is a pivotal time for the future of food, as the industry adapts to the current climate and finds a way forward.

LSH Property Australia’s Breakfast Creek Lifestyle Precinct, located in Brisbane and anchored by our major tenant Mercedes-Benz Brisbane, has been designed with the future of food in mind. The project brings together a collaboration of premium brands across food and wine, automotive, health and wellness and retail. It pairs the best-in-class culinary service with exciting brand partnerships, to offer an immersive experience – a first for Brisbane and Australia.

We believe that collaboration and experience are both key drivers shaping the future of food. To help us bring to life a world-class food experience, LSH Property Australia sought to partner with an industry-leading expert. We found the perfect fit in multi-award-winning chef, Shannon Kellam, and his wife Clare, who are behind Brisbane’s popular Montrachet restaurant and King Street Bakery.

Shannon and Clare have created a brand new concept for Breakfast Creek Lifestyle Precinct that has never been experienced before in Brisbane. The offering brings culinary excellence spanning a number of innovative businesses located throughout the precinct, including a new boutique bistro, MICA Brasserie; a premium event space and culinary school, Lumière Events & Culinary Studio; and large-scale production kitchen, The Kneadery.

As we look towards the future of the food, here are some of the trends we predict will drive the industry forward.

 

Production kitchens

There is real potential for production kitchens (also known as “dark kitchens”) during a time when the demand for take-away meals is high. The spacious design of Breakfast Creek Lifestyle Precinct enabled Shannon and Clare to bring to life The Kneadery, a 1000-square-metre kitchen that operates at scale, allowing them to supply their multiple food venues at Breakfast Creek Lifestyle Precinct as well as their offsite venues across Brisbane.

The model not only cuts down the workload of individual restaurants, but it also enables businesses that do not work in centralised kitchens to buy customised, pre-prepared items – a service that the forward-thinking Kellams are already providing through The Kneadery.

The resurgence of the home chef

With recent social restrictions, and the ability to go to fine-dining restaurants limited, there has been a trend towards people rediscovering the joy of home cooking. We predict that this resurgence will see culinary schools rise in popularity, as many aspiring chefs look to hone their skills. Shannon and Clare’s Lumière Culinary Studio Culinary School at Breakfast Creek Lifestyle Precinct has been designed with state-of-the-art kitchens using top-of-the-range Miele appliances, providing students with a range of courses and the opportunity to learn from expert chefs.
